Weekend Recipe No: 2 - Baked Lemon chicken with Mashed potato and Dal fry

This weekend recipe is "Baked Lemon chicken with Mashed Potato and Dal Fry". Its a balanced full meal with protein, carbs, fat, flavor which can satisfy your taste buds and can keep you full for a longer period. It is a weird combination to have Mashed potato and Dal fry and we all liked the combination. It's like adding an Indian touch to the whole dish



Ingredients:

Chicken Thighs with skin: 3 thighs
Potatoes : 6 small
Tomato : 1 small
Olive oil : 2 table spoon
Lemon : 1 Small
Garlic : 3 cloves
chilly  1/4 tea spoon
Turmeric : 1/4 tea spoon
Green chilly : 2 chilly
Salt and Pepper : As Required
Butter : 1 small cube

Marinating the chicken:

Take a bowl, add olive oil, Lemon jest(scrapped peel of lemon), Lemon extract, grated garlic, add chilly powder, turmeric, pepper and salt (for flavor and taste). Keep whisking the mixture while adding the ingredients allowing  it to blend. Add the Chicken thighs and close it tightly with cling film and let it marinate for about an hour.

Baking the Chicken Thighs:

1. Pre-heat the oven to 200 degree Celsius or 425 degree Fahrenheit. Until the oven is ready we can roast the chicken thighs.
2. Heat a pan, add butter and place the chicken thighs and roast the chicken.
3.Roast the chicken thigh until its golden brown on both sides.
4.By this time oven  will be ready. Place the chicken in the baking tray with skin side facing up. Pour the marinating mixture to the baking tray. Bake the chicken for around 30-35 min ( Juicy inside to crispy inside).
5. Crispy baked chicken is ready to be served.

Mashed potatoes and Dal fry:

1. Steam cook the potatoes, Peel it and mash it. Add pepper and salt as required.
2. Cook dal with tomato, green chilly and garlic. Mash the dal after cooking and add thadka to it.

Plating and Serving :

One Baked Lemon chicken thigh with a small cup of potato mash and add dal fry to the dish( alternatively you can use any dark sause similar to the dark steak sause). Garnish the dish with coriander leaves.

    Why again in oven ?

  2. Roast for only couple of minutes then it goes into the oven. This gives a crispy touch on the outer layer of marinated chicken thighs
